Amestecam bine sa se topeasca zaharul.\u003Cb\u003E \u003C\/b\u003EIntr-un castron punem faina amestecata cu sarea si drojdia uscata. Facem o gropita la mijloc si turnam incet amestecul de lapte cu unt. Framantam bine, pana obtinem un aluat neted si nelipicios. Lasam la dospit pana isi dubleaza volumul.\u003Cbr \/\u003E\u003Cbr \/\u003EFramantam aluatul crescut, sa scoatem aerul din el, apoi il impartim in 2 parti. Fiecare parte se intinde intr-o foaie dreptunghiulara de cca 0.5 cm grosime, apoi se unge bine cu untul ce l-am lasat la temperatura camerei si l-am amestecat cu zaharul aromat.\u003Cbr \/\u003E\u003Cbr \/\u003EIndoim foaia de aluat, apoi taiem fasii de cca 2 cm latime. Rulam aluatul atat cat sa acoperim branza si sa obtinem un rulou. Taiem ruloul cu un cutit bine ascutit sau cu un cuter.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003ERepetam operatiunea pana terminam aluatul. Omogenizam, apoi facem o gaura in mijloc si punem ouale batute putin si amestecul cu lapte. Framantam pana obtinem un aluat elastic si omogen. Daca mai e necesar se adauga putina faina.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru umplutura:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E200-250 g nuca macinata \u003Cbr \/\u003E100 g zahar\u003Cbr \/\u003E50 g cacao\u003Cbr \/\u003E1 lingura scortisoara\u003Cbr \/\u003E50 g unt moale \u003Cbr \/\u003E\u003Cbr \/\u003EIntr-un castron amestecam nuca macinata cu zaharul, cacaoa si scortisoara.\u003Cbr \/\u003E\u003Cbr \/\u003EScoatem aluatul pe masa infainata, il intindem in foaie subtire de cca 0.5 cm, apoi ungem bine cu untul moale. Presaram deasupra amestecul cu nuca si rulam foaia, cat mai strans posibil. Cu o bucata de ata\/sfoara de bucatarie taiem rulouri de 4-5 cm grosime. Faina o punem intr-un castron, facem o adancitura la mijloc si  turnam amestecul de drojdie.\u003Cbr \/\u003E\u003Cbr \/\u003ESeparat batem oul cu putina sare, apoi restul de  lapte, restul de zahar si coaja de portocala. Acest amestec il turnam peste  drojdia umflata, apoi incepem sa framantam aluatul.\u003Cbr \/\u003E\u003Cbr \/\u003EDupa ce s-au  incorporat toate ingredientele, turnam putin cate putin untul topit si  framantam pana obtinem un aluat neted si nelipicios. Se acopera  castronul cu un prosop si se lasa la crescut la loc caldut, pana isi  dubleaza volumul.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cul\u003E\u003Cli\u003E\u003Ci\u003EDaca e necesar mai adaugati cateva linguri de faina.\u003C\/i\u003E\u0026nbsp;\u003C\/li\u003E\u003Cli\u003E\u003Ci\u003EPentru framantare se poate folosi masina de paine. \u003C\/i\u003E\u003C\/li\u003E\u003C\/ul\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru umplutura:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cbr \/\u003Edulceata de afine\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cbr \/\u003EAluatul crescut il rasturnam pe masa unsa cu ulei si il impartim in 12 bile, aproximativ egale. Fiecare bila de aluat se aplatizeaza, apoi pe mijlocul fiecaruia se pune cate o lingura de dulceata. Se ridica marginile, se strang si se lipesc, formand o bocceluta. Le asezam, cu inchizatura dedesupt, in tava (25\/35 cm) unsa bine cu ulei. Se lasa la crescut pentru cca 20 de minute, se ung cu un galbenus de ou desfacut cu putin lapte. Se da tava la cuptor la foc mediu, pentru 20 de minute, pana cand incep sa se rumeneasca. Turnam deasupra laptele clocotit, apoi punem la fiert la foc mic pana compozitia incepe sa se ingroase.\u0026nbsp; Aproape de sfarsit adaugam mierea. Dam deoparte si lasam la racit. Cand compozitia s-a racit foarte bine incorporam albusul batut spuma tare cu un praf de sare.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru uns:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E1 galbenus\u003Cbr \/\u003E2 linguri lapte\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003EDupa cum va spuneam, imi place reteta de la \u003Ca href=\"http:\/\/dulciurifeldefel.blogspot.com\/2011\/03\/cozonac-cu-nuca-si-cacao.html\" target=\"_blank\"\u003E\u003Cb style=\"color: red;\"\u003Ecozonacul cu nuca si cacao\u003C\/b\u003E\u003C\/a\u003E. Omogenizam si lasam la loc caldut pana se umfla si apar basicute  la suprafata.\u003Cbr \/\u003E\u003Cbr \/\u003EPunem maiaua in cuva masinii de paine sau in castron, daca se framanta cu mana, adaugam apoi ouale, restul de  zahar, sarea, untul topit si racit, coaja de portocale, laptele ramas si  faina putin cate putin. Framantam pana se inglobeaza toate  ingredientele si obtinem un aluat elastic. Lasam la crescut pana isi  dubleaza volumul.\u003Cbr \/\u003E\u003Cbr \/\u003EScoatem aluatul pe masa usor infainata si il impartim in 4. Fiecare  parte o intindem cu sucitorul intr-o foaie dreptunghiulara de cca 0.5 cm  grosime si lunga cat tava in care vom coace cozonacul.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003ECa si in cazul \u003Ca href=\"http:\/\/dulciurifeldefel.blogspot.com\/2012\/04\/cozonac-cu-fructe-uscate.html\" target=\"_blank\"\u003E\u003Cb style=\"color: red;\"\u003Ecozonacului cu fructe uscate\u003C\/b\u003E\u003C\/a\u003E, am impartit aluatul in mai multe parti si am copt in forme mici. Fiecare bucata de aluat o rotunjim intre palme, dandu-i forma de bila. Asezam bilele intr-o tava bine unsa cu ulei. Lasam vreo 15-20 de minute la crescut,\u0026nbsp; ungem cu galbenus de ou desfacut cu lapte si dam la cuptor la foc mediu, pana se rumenesc frumos deasupra.\u003Cbr \/\u003E\u003Cbr \/\u003EInainte cu vreo 10 minute de a fi gata se prepara siropul. Sucul se pune intr-un vas cu zaharul si mierea, apoi la foc mic, pana ajunge la punctul de fierbere. Se amesteca bine, sa se topeasca zaharul si se toarna asa fierbinte peste chifle.
