Bucatile de blat pe care le-am scos  le punem intr-un castron si le faramitam bine cu mana. \u003Cbr \/\u003E\u003Cbr \/\u003ESmantana pentru frisca proaspat scoasa de la frigider se mixeaza pana incepe sa capete consistenta. Se adauga zaharul vanilat, esenta de rom si intaritorul de frisca. Se mixeaza in continuare pana se intareste. Cand ajunge la punctul de fierbere se da deoparte si se omogenizeaza. Se lasa sa se racoreasca putin, apoi se pune gelatina si se omogenizeaza. Se da vasul la frigider pentru cateva ore, pana compozitia se raceste foarte bine si se ingroasa.\u003Cbr \/\u003E\u003Cbr \/\u003ECapsunile le taiem felii ( sau fasii sau cubulete). Pastram cateva si pentru decor.\u003Cbr \/\u003E\u003Cbr \/\u003EMixam crema de ciocolata alba, cateva minute, pana capata putina consistenta. Adaugam iaurtul si omogenizam. La sfarsit incorporam capsunile, amestecand usor.\u003Cbr \/\u003E\u003Cbr \/\u003ETapetam cu folie alimentara o tava mica de tort (18 cm diametru) sau intr-o cratita. Punem piscoturile de jur imprejurul tavii, apoi turnam crema de iaurt. Amestecam bine, pana se topeste ciocolata, apoi adaugam untul lasat la temperatura camerei si amestecam pana se topeste. Galbenusurile frecate cu ulei si esenta de rom se incorporeaza usor in bezea, apoi faina  amestecata cu praful de copt si cacaoa.\u003Cbr \/\u003E\u003Cbr \/\u003ECompozitia obtinuta se toarna  intr-o tava ( 18 cm diametru) tapetata cu hartie de  copt si se coace la foc mediu, in jur de jumatate de ora. Se face proba cu  scobitoarea. Se scoate blatul pe un gratar, se lasa la racit, apoi se  taie in 3.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru umplutura:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E1 compot de fructe exotice (ananas, papaya si guava)\u003Cbr \/\u003E\u003Cbr \/\u003E250 ml smantana pentru frisca\u003Cbr \/\u003E1 lingura zahar vanilat\u003Cbr \/\u003E1 intaritor de frisca \u003Cbr \/\u003E\u003Cbr \/\u003EPunem fructele din compot intr-o strecuratoare. Se lasa sa se scurga bine.\u003Cbr \/\u003E\u003Cbr \/\u003ESmantana rece pentru frisca se bate pana incepe sa capete consistenta. Se adauga zaharul vanilat si intaritorul de frisca si se bate pana devine ferma si pufoasa.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema de ciocolata:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E50 g ciocolata amaruie\u003Cbr \/\u003E100 ml smantana pentru frisca\u003Cbr \/\u003E\u003Cbr \/\u003ECiocolata rupta bucatele o topim la foc mic impreuna cu smantana pentru  frisca. Omogenizam, lasam sa se raceasca, apoi dam la rece pana se  intareste si se raceste foarte bine. Mixam apoi pana obtinem o crema  pufoasa.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cbr \/\u003EBlaturile se vor insiropa cu zeama din compot, dupa preferinta. Se adauga zaharul si zaharul vanilat si se bat in continuare pana se obtine o spuma densa si lucioasa ca pentru bezea. Incorporam galbenusurile amestecate cu ulei, apoi faina in care am amestecat nuca macinata si praful de copt. Se amesteca usor cu o spatula, cu miscari de jos in sus.\u003Cbr \/\u003E\u003Cbr \/\u003ECompozitia se toarna intr-o tava (18 cm diametru) tapetata cu hartie de copt si dam la cuptor la foc mediu, pentru cca 30 de minute. Se va face proba cu scobitoarea. Se scoate blatul pe un gratar si se lasa la racit.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru nucile caramelizate:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E100 g zahar\u003Cbr \/\u003E100 g miez de nuca\u003Cbr \/\u003E\u003Cbr \/\u003EZaharul se caramelizeaza. Cand a devenit lichid se adauga\u0026nbsp; nuca si se amesteca, astfel incat  nuca sa fie bine acoperita de caramel. Rasturnam pe o bucata de hartie de copt si lasam la racit. Cand  s-a racit bine si s-a intarit se pune intr-o punga groasa si se sparge  cu ciocanul de snitele.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E100 ml smantana pentru frisca\u003Cbr \/\u003E250 g mascarpone\u003Cbr \/\u003E1 intaritor de frisca\u003Cbr \/\u003E1 lingura zahar vanilat\u003Cbr \/\u003E\u003Cbr \/\u003ESmantana rece se bate cateva minute cu mixerul pana incepe sa capete consistenta. Se adauga zaharul vanilat si intaritorul de frisca si se bate pana devine ferma si pufoasa.\u003Cbr \/\u003E\u003Cbr \/\u003EMixam mascarponele intr-un alt castron, apoi incorporam frisca batuta si nucile caramelizate.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003EPastram o parte din nucile caramelizate pentru decor.\u003C\/i\u003E \u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema de ciocolata:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E50 g ciocolata amaruie\u003Cbr \/\u003E100 ml smantana pentru frisca \u003Cbr \/\u003E\u003Cbr \/\u003ECiocolata rupta bucatele o topim la foc mic impreuna cu smantana pentru frisca. Omogenizam, lasam sa se raceasca, apoi dam la rece pana se intareste si se raceste foarte bine. Mixam apoi pana obtinem o crema pufoasa si ciocolatoasa.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru sirop:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E50 ml apa\u003Cbr \/\u003E50 g zahar\u003Cbr \/\u003E1 lingura esenta de rom\u003Cbr \/\u003E\u003Cbr \/\u003EBlatul se taie in 3 parti ce se vor insiropa dupa preferinta, mai mult sau mai putin. Se mixeaza apoi pana compozitia devine cremoasa. Se adauga  zaharul si se mixeaza pana se incorporeaza bine si se topeste. Urmeaza  apoi ouale unul cate unul, mixand bine dupa fiecare. La sfarsit  incorporam faina amestecata cu cacaoa, praful de copt si pudra de  portocale.\u003Cbr \/\u003E\u003Cbr \/\u003ECompozitia obtinuta o turnam in tava (20 cm diametru) tapetata cu hartie de  copt si dam la cuptor la foc mediu pentru cca 40 de minute. Blatul copt  se scoate pe un gratar si se lasa la racit. \u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema ganache de ciocolata alba:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E200 g ciocolata alba\u003Cbr \/\u003E200 ml smantana pentru frisca\u003Cbr \/\u003E\u003Cbr \/\u003ECiocolata rupta bucatele se amesteca cu smantana pentru frisca si se  pune la foc mic. Se aduce compozitia la punctul de fierbere, se da  deoparte si se omogenizeaza. Se lasa sa se raceasca, apoi se da la  frigider pentru cateva ore, de preferat peste noapte.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru caramel:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E100 g zahar\u003Cbr \/\u003E40 g unt\u003Cbr \/\u003E75 ml frisca lichida\u003Cbr \/\u003E\u003Cbr \/\u003EZaharul se caramelizeaza intr-o craticioara. Cand a devenit auriu si  lichid, se da deoparte si turnam frisca lichida (atentie la aburi!)  Punem din nou pe foc si amestecam continuu pana se topeste caramelul si  compozitia incepe sa se ingroase, moment in care punem si untul. Mai  fierbem cateva minute pana caramelul ajunge la consistenta smantanii. Se da deoparte de pe foc  si se lasa la racit.\u003Cb\u003E \u003C\/b\u003E\u003Cbr \/\u003E\u003Cb\u003E\u003Cbr \/\u003E\u003C\/b\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema de branza:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cb\u003E\u003Cbr \/\u003E\u003C\/b\u003E\u003Cbr \/\u003E200 g crema de branza\u003Cbr \/\u003E50 g unt moale\u003Cbr \/\u003E100 g  zahar pudra\u003Cbr \/\u003E1 zahar vanilat\u003Cbr \/\u003E1\/2 lingurita scortisoara\u003Cbr \/\u003E\u003Cbr \/\u003ESe bate cu mixerul crema de branza cu untul moale, pana cand crema devine pufoasa. Se adauga zaharul pudra, zaharul vanilat si scortisoara si se mai bate putin, pana se omogenizeaza. Se da la rece pana se intareste.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema de ciocolata:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cb\u003E \u003C\/b\u003E\u003Cbr \/\u003E50 g ciocolata amaruie\u003Cbr \/\u003E30 ml smantana pentru frisca\u003Cbr \/\u003E1 lingura unt\u003Cbr \/\u003E\u003Cb\u003E\u003Cbr \/\u003E\u003C\/b\u003E\u003Cbr \/\u003ESe topeste ciocolata, untul si smantana pentru frisca, amestecand  continuu, pana cand compozitia devine omogena. Se lasa la racit.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru ornat:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E150 ml smantana pentru frisca\u003Cbr \/\u003E2 pliculete zahar vanilat \u003Cbr \/\u003E\u003Cbr \/\u003E150 g ciocolata amaruie (rece, tinuta cateva minute la congelator)\u003Cbr \/\u003Ebilute de ciocolata alba si neagra\u003Cbr \/\u003E\u003Cbr \/\u003EBlatul copt si racit se taie in 3 parti.\u003Cbr \/\u003E\u003Cbr \/\u003EPunem primul blat pe platou. Turnam jumatate din crema de ciocolata alba, apoi punem caramelul si acoperim cu cealalta jumatate de crema. Punem al 2-lea blat, jumatate din cantitatea de crema de branza, crema de ciocolata neagra si restul de crema de branza.
