Amestecam pana obtinem o compozitie omogena.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003EDaca va plac, puteti adauga in umplutura si cateva stafide.\u003C\/i\u003E\u003Cbr \/\u003E\u003Cbr \/\u003EIntindem aluatul, apoi pe una din margini punem o fasie de branza. Rulam aluatul atat cat sa acoperim branza si sa obtinem un rulou. Taiem ruloul cu un cutit bine ascutit sau cu un cuter.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003ERepetam operatiunea pana terminam aluatul. Facem o gaura in mijloc, punem drojdia, sarea, zaharul, untul taiat cubulete si laptele rece. La inceput se amesteca cu o furculita pana faina se transforma in coca, apoi se framanta cu mana pana se obtine un aluat omogen, care nu se lipeste de mana si castron. Nu se framanta mult, doar cat sa nu aiba cocoloase.\u003Cbr \/\u003E\u003Cul\u003E\u003Cli\u003ELa nevoie se mai poate adauga putin lapte rece sau faina, dupa cum o cere aluatul.\u003C\/li\u003E\u003C\/ul\u003EAluatul se strange sub forma de bila si se da la frigider pentru 1 ora.\u003Cbr \/\u003E\u003Cbr \/\u003EUntul se freaca, sa iasa apa din el, apoi se amesteca cu 2-3 linguri faina. Se pune pe o bucata de folie alimentara, se inveleste, i se da o forma cubica si se da la frigider.\u003Cbr \/\u003E\u003Cbr \/\u003EPe masa presarata cu faina intindem cubul de unt, pana obtinem o foaie patrata, de cca 1 cm grosime.\u003Cbr \/\u003E\u003Cbr \/\u003EIntindem apoi aluatul, intr-o foaie dubla ca marime, fata de patratul de unt.\u003Cbr \/\u003E\u003Cbr \/\u003EPunem patratul de unt peste foaia de aluat si impachetam astfel: partea din dreapta se aduce peste unt, iar cea din stanga se aduce pe deasupra, pana la marginea foii.\u003Cbr \/\u003E\u003Cbr \/\u003ESe intinde apoi cu sucitorul intr-o foaie de 3 ori mai lunga decat este pe lat, de cca 1 cm grosime. Mai departe, impachetam in 3 parti, se aduce partea din fata, pana la jumatate, iar cealalta parte se aduce deasupra si inca o data in 3. Se unge apoi cu untul moale, la temperatura camerei. Taiem foaia in 8 segmente de cerc, egale intre ele, lasand mijlocul netaiat. In continuare, fiecare segment de cerc se intoarce peste cercul din mijlocul foii, lipindu-le. Ordinea de intoarcere si asezare se face succesiv, numai din pozitiile opuse fata in fata. Adaugam pieptul de pui si il intoarcem pe toate partile pana se albeste. Punem si rosiile cu tot cu suc si omogenizam. Lasam pe foc pana carnea este fiarta si zeama a scazut suficient. Cercurile pline se aseaza intr-o tava tapetata cu hartie de copt, se ung cu ou batut, iar deasupra se aseaza cate un cerc decupat. Se ung din nou cu ou si se presara cu susan. Se da tava la cuptor in jur de 20 minute, pana se umfla si se rumenesc. Se scot pe un gratar si se lasa la racit.\u003Cbr \/\u003E\u003Cbr \/\u003EIntre timp facem crema de branza:\u003Cbr \/\u003E\u003Cbr \/\u003EBranza de vaci se mixeaza cu untul moale si smantana, pana devine o crema fina si spumoasa. Se adauga ceapa si mararul tocate fin. Se potriveste gustul de sare si piper.\u003Cbr \/\u003E\u003Cbr \/\u003ECrema se spriteaza in vol-au-vent-urile racite.
