Amestecam pana dispar toate cocoloasele si obtinem o compozitie de  consistenta uleiului. Lasam la racit.\u003Cbr \/\u003E\u003Cbr \/\u003EAlbusurile se bat spuma tare cu un  praf de sare. Adaugam jumatate din cantitatea de zahar si mixam pana  obtinem o bezea lucioasa. Galbenusurile se freaca pana devin ca o crema  cu cealalta jumatate din cantitatea de zahar. Adaugam treptat uleiul,  esenta de rom, apoi compozitia cu cacao racita. Amestecam usor, ca la  maioneza. Incorporam faina amestecata cu praful de copt si la sfarsit  (in cateva reprize) bezeaua. \u003Cbr \/\u003E\u003Cbr \/\u003ETurnam compozitia intr-o tava (42\/29 cm) tapetata cu hartie de  copt. Lovim apoi cu palma in masa de cateva ori, sa eliminam exceasul de  aer din compozitie si dam tava la cuptor la foc mediu pentru cca 40 de  minute. Facem proba cu scobitoarea. Scoatem blatul pe un gratar si-l lasam la racit.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E200 g mascarpone\u003Cbr \/\u003E250 ml smantana pentru frisca\u003Cbr \/\u003E2 linguri zahar\u003Cbr \/\u003E1 plic zahar vanilat\u003Cbr \/\u003E\u003Cbr \/\u003ESmantana pentru frisca se mixeaza pana incepe sa capete consistenta,  apoi se adauga zaharul si se mixeaza pana se intareste si devine  pufoasa.\u003Cbr \/\u003E\u003Cbr \/\u003EMascarponele se mixeaza cu zaharul vanilat, apoi se incorporeaza frisca amestecand usor.\u003Cbr \/\u003E\u003Cbr \/\u003EBlatul de pandispan racit se taie in 2, obtinand astfel 2 blaturi subtiri. Apoi fiecare blat se taie in 2 pe lungime, obtinand 4 blaturi inguste si subtiri.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003EAm folosit doar 3 din ele, celalalt au vrut piticii sa-l pape ca atare si nu i-am putut refuza. :) \u003C\/i\u003E\u003Cbr \/\u003E\u003Cbr \/\u003EImpartim crema in 2 si o repartizam intre cele 3 blaturi. Acoperim prajitura cu frisca batuta si bilute de ciocolata. Se adauga zaharul si se mixeaza in continuare pana obtinem o spuma densa si lucioasa, ca de bezea.\u003Cbr \/\u003E\u003Cbr \/\u003ESe amesteca galbenusurile cu uleiul, amestecand uosr, pana devin ca o crema. Se toarna peste spuma de albusuri si se mixeaza usor. In cazul in care mizxerul nu are o treapta mica de viteza se foloseste lingura.\u003Cbr \/\u003E\u003Cbr \/\u003ECacaoa se incorporeaza in faina, apoi se adauga in compozitia de albus si se amesteca usor cu o lingura, cu miscari de jos in sus.\u003Cbr \/\u003E\u003Cbr \/\u003ETurnam compozitia intr-o tava (22 cm) tapetata cu hartie de copt (eu am folosit o cratita, pentru ca nu am o tava asa mica) sau unsa cu ulei si tapetata cu faina si se da la cuptor la foc mediu, pana trece testul cu scobitoarea.\u003Cbr \/\u003E\u003Cbr \/\u003ESe scoate pe un gratar, se lasa la racit, apoi se taie in 2. Adaugam cate o lingura din compozitia de iaurt, astfel incat sa aducem la aceeasi temperatura, apoi incorporam in ce-a ramas din compozitia de iaurt.\u003Cbr \/\u003E\u003Cbr \/\u003ESmantana pentru frisca rece se mixeaza pana incepe sa capete consistenta, apoi se adauga zaharul si se bate in continuare pana devine teapana si pufoasa. Incorporam in compozitia de iaurt, amestecand usor cu o lingura, cu miscari de jos in sus. Dam la rece pana incepe sa se intareasca. Intre timp pregatim \u003Cb\u003Emousse-ul de ciocolata:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E200 g ciocolata amaruie\u003Cbr \/\u003E250 ml smantana pentru frisca\u003Cbr \/\u003E100 g lapte condensat\u003Cbr \/\u003E5 g gelatina\u003Cbr \/\u003E\u003Cbr \/\u003EGelatina se hidrateaza in cateva linguri cu apa rece.\u003Cbr \/\u003E\u003Cbr \/\u003ECiocolata rupta bucatele o topim la foc mic impreuna cu jumatate din cantitatea de smantana pentru frisca si laptele condensat. Omogenizam si lasam la racit. Cand s-a racorit si a ajuns la o temperatura suportabila la deget se adauga gelatina si se amesteca pana aceasta se dizolva si se incorporeaza in crema.\u003Cbr \/\u003E\u003Cbr \/\u003ERestul de frisca se mixeaza, pana se intareste si devine pufoasa, apoi se incorporeaza usor, amestecand cu o lingura. Dam la rece pana incepe sa se intareasca.\u003Cbr \/\u003E\u003Cbr \/\u003EIn tava in care am copt blatul, tapetata cu folie alimentara, punem unul din blaturi, apoi cate un start de mousse, unul de ciocolata, unul de iaurt, unul deasupra celuilalt. Acoperim cu cel de-al 2-lea blat, invelim in folie si dam la rece pentru cateva ore. Omogenizam si punem vasul la foc mic. Fierbem pana compozitia incepe sa se ingroase. Dam deoparte si lasam la racit. Cand a ajuns la o temperatura suportabila la deget adaugam gelatina hidratata si omogenizam. Dam la frigider pana incepe sa se ingroase si ajunge la consistenta unei smantani.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Ci\u003EPentru siguranta, se trece glazura printr-o sita, pentru a indeparta eventualele cocoloase de cacao. \u003C\/i\u003E\u003Cbr \/\u003E\u003Cbr \/\u003ETurnam glazura peste tort incepand din centru. Fiind lichida ea se va scurge si va acoperi si marginile tortului. Albusurile se bat spuma tare cu un praf de sare. Adaugam jumatate din cantitatea de zahar si mixam pana obtinem o bezea lucioasa. Galbenusurile se freaca pana devin ca o crema cu cealalta jumatate din cantitatea de zahar. Adaugam treptat uleiul, esenta de rom, apoi compozitia cu cacao racita. Amestecam usor, ca la maioneza. Incorporam faina amestecata cu praful de copt si la sfarsit (in cateva reprize) bezeaua. \u003Cbr \/\u003E\u003Cbr \/\u003ETurnam compozitia intr-o tava (26 cm diametru) tapetata cu hartie de copt. Lovim apoi cu palma in masa de cateva ori, sa eliminam exceasul de aer din compozitie si dam tava la cuptor la foc mediu pentru cca 40 de minute. Facem proba cu scobitoarea.\u003Cbr \/\u003E\u003Cbr \/\u003EScoatem blatul pe un gratar si-l lasam la racit.\u003Cbr \/\u003E\u003Cbr \/\u003E\u003Cb\u003EPentru crema:\u003C\/b\u003E\u003Cbr \/\u003E\u003Cbr \/\u003E90 g ciocolata alba\u003Cbr \/\u003E230 ml smantana dulce pt frisca\u003Cbr \/\u003E75 g crema de branza Almette\u003Cbr \/\u003E1 lingura zahar\u003Cbr \/\u003Eintaritor de frisca (doar daca e absolut necesar)\u003Cbr \/\u003Eesenta de vanilie\u003Cbr \/\u003E\u003Cbr \/\u003ECiocolata rupta bucatele o topim la foc mic impreuna cu 90 ml smantana. Cand a ajuns la punctul de fierbere, dam deoparte, omogenizam si dam la rece pentru cateva ore. \u003Cbr \/\u003E\u003Cbr \/\u003ERestul de smantana rece se bate pana capata putina consistenta si apar mici basicute la suprafata. Fiecare parte de aluat o intindem intr-o foaie dreptunghiulara de cca 0.5 cm grosime. Ungem fiecare foaie cu untul moale la temperatura camerei, apoi presaram cu amestecul de nuca si cacao. Presam putin cu mana, apoi rulam cat mai strans posibil. \u003Cbr \/\u003E\u003Cbr \/\u003ECu ajutorul unui fir de ata taiem rulouri (bagam ata pe sub rulou, apoi ca si cum am face un nod taiem rulourile) de cca 2 degete grosime. Lasam la crescut pana isi dubleaza volumul.\u003Cbr \/\u003E\u003Cbr \/\u003EScoatem aluatul pe masa usor infainata si il impartim in 4. Ungem cu galbenus de ou desfacut cu putin lapte si dam la cuptor la foc mediu pana se rumenesc frumos deasupra. Se lasa la racit in tava, se scot pe un gratar.
